Recipe: No Bake Energy Balls

These are a favorite in our house! Great when wanting a quick energy dense snack to “grab-n-go”. Also very easy to have littles help make and enjoy. : )

(*Follow age-appropriate recommendations, such as not consuming raw honey until at least one year of age.)

Peanut Butter & Chocolate

Ingredients:

1 c dry oatmeal

1/2 c peanut butter

1/2 c mini chocolate chips

1 tbsp chia seeds

1/2 c ground flax

1/3 c honey

1 tsp vanilla extract

2/3 c toasted coconut flakes (optional)

Directions:

  1. Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the fridge for half an hour.
  2. Once chilled, roll into balls about 1″ in diameter. Store in airtight container and keep refrigerated up to 1 week.

Pumpkin

Ingredients:

1/4 c nut butter

1/4 c maple syrup or honey

1-1/2 tsp pumpkin pie spice

1/4 tsp salt

3 c oats

1/4 c pumpkin seeds

1 tbsp coconut oil

1/2 c pumpkin puree

1/2 tsp cinnamon

1 tsp vanilla extract

1/4 c dried cranberries

Directions:

  1. Heat the nut butter, coconut oil, and maple syrup in a large saucepan over medium heat and whisk until smooth.
  2. Stir in the pumpkin puree, pumpkin pie spice, cinnamon, salt, and vanilla until combined. Fold in the oats, cranberries, and pumpkin seeds.
  3. Wet hands slightly and form dough tightly into 1″ to 1.5″ balls. Or, if the dough doesn’t stick together, place dough in fridge for 30 minutes prior to forming dough balls so it’s easier to handle. Press additional cranberries evenly around the dough if desired.
  4. Store in airtight container in fridge or freezer until ready to enjoy.
